While googling for the email address of a spam SEO email, I came across this page on claytowne.com. Its got some good advice on how to deal with advances by SEO companies via email. Essentially, the guidelines are:

1. Remember, SEO companies are in the business to make money for themselves, not for you.
2. SEO spammers rarely use genuine email addresses, generally using gmail, yahoo, hotmail etc.
3. SEO spammers never look at your website, and never do any ranking analysis - this would cost far too much for speculative work on the thousands of websites that they spam each day.
4. Even if it is an established SEO company, always get feedback from genuine clients that you have found yourselves (not just email addresses that the company has provided).
